A beautifully expressive blend of barrel-aged mixed-culture saisons conditioned on juicy Elephant Heart plums.

It pours a slightly hazy orange-yellow, greeting you with a wonderful funky aroma and subtle notes of plum. On the palate, it delivers a bright acidity, ending with a lingering, vibrant sour plum finish and soft carbonation.

A saison base brewed with undermodified barley and a touch of rye. The wort co-fermented in a fruiting barrel with 150lbs of Elephant Heart plums from the 2021 season grown in the Similkameen Valley by Snowy Mountain Farm.

The plums underwent carbonic maceration in the barrel for a week and began fermentation from the wild yeast present on the skins before the wort was added. A mixed culture was added to finish the fermentation.
