A hand-disgorged pét-nat cider blend of Ontario-grown Winesap, Fréquin Rouge, Burgundy, Burford, Porter's Perfection, and Calville Blanc d'Hiver heritage apples.

All the apples were pressed and bottled as a pét-nat, before hand-disgorging each bottle à la volée (without freezing the necks).

Highly, highly sparkling (chill well before opening), this blend has big notes of butterscotch and vanilla. While completely dry, it has big perceptual sweetness, and a little prickle of clove and allspice on the finish.

Tannic, but less so than ciders made exclusively with old world fruit. Only 9 cases made, and we have one of them!
